1 package gnocchi

1/2 cup chicken broth

1/3 cup sundried tomatoes

2 handfuls spinach

Start your sauce

Boil a large pot of salted water. While the water boils make your sauce. Heat a large frying pan over medium meat. Add minced garlic and cook for 30 seconds. Add 1/2 cup of chicken stock and Boursin cheese and cook until cheese melts. Add half a cup of cream, 1/3 cup of sun-dried tomatoes, and two handfuls of spinach and cook until spinach is wilted.

Cook gnocchi and assemble

Cook gnocchi according to package instructions, should be about two minutes. Reserve 1/2 cup pasta water. Add gnocchi to Boursin sauce and mix well, and add pasta water as needed to thin out sauce. Top with fresh basil and parmesan.
