You can make a few subs to make this recipe even simpler - do packaged gravy, instant mashed potatoes, frozen popcorn chicken, or any combination of the 3! But honestly even with all the aspects, this recipe is incredibly simple, and incredibly delicious.

Also if you don't have all the spices, don't sweat it. You can simplify it down to just the salt, pepper, paprika, garlic and onion.

Pantry

1/2 tsp salt

1/4 tsp dried basil

1/4 tsp dried thyme

1/2 tsp dried oregano

1 tsp white pepper

1 tsp paprika

1 tsp garlic powder

1 tsp onion powder

1/2 tsp dried mustard

1/2 tsp dried ginger

1 tsp black pepper, divided

1 tsp onion powder, divided

1/2 cup cornstarch

1/4 cup flour

1 1/2 cups chicken broth

1 1/2 cups beef broth

Oil spray

Produce

4 russet potatoes

1 cup frozen corn, warmed

Protein

3 chicken breasts

Dairy

1 cup buttermilk

1/2 cup whole milk

1/2 cup butter, divided

1 cup shredded cheddar cheese

Herb blend

1/2 tsp salt

1/4 tsp dried basil

Gravy

1/4 cup butter

1/4 cup flour

1/2 tsp onion powder

1/2 tsp black pepper

1 1/2 cups chicken broth

1 1/2 cups beef broth

1.

Marinate your chicken

Dice your chicken into 1 inch cubes. Add to a bowl with 1 cup buttermilk (or enough to cover the chicken). Mix your herb blend into a small bowl and add half to your marinated chicken, save the half for later. Mix chicken and set in fridge for at least 30 minutes to overnight.

Make your mashed potatoes

Peel and largely dice your potatoes. Add to a pot and cover with cold water and an aggressive amount of salt (don't worry you're not eating all this salt - it's to season the potatoes from the inside, while most ends up getting dumped at the end, but it makes your potatoes mighty tasty). Bring potatoes to a boil and cook until fork tender. Drain and return to pot to mash. Add 1/4 cup butter and 1/4 cup milk. Mash and add more milk until your desired consistency.

Cook your chicken

Place 1/2 cup cornstarch and remaining herb blend into a large bowl and mix. A few at a time, take chicken pieces out of marinade, let excess liquid drip off, and dip into cornstarch mixture. Once all chicken is coated, spray base of air fryer with oil, add chicken, spray chicken, and bake at 400 for 10-15 minutes until cooked through and golden on the outside.

Make your gravy

While your chicken cooks, make your gravy. Melt 4 tbsp butter in a small pot. Once melted add 1/4 cup flour, 1/2 tsp onion powder and 1/2 tsp black pepper. Whisk and cook for 1 minute. In 3 batches, add broth (either one - we're adding both), whisk until smooth and repeat. Cook until gravy is thickened and your preferred consistency (about 5 minutes).

Assemble your bowls

To your bowls, add mashed potatoes, chicken pieces, warmed corn, shredded cheddar, and top it with as much gravy as you please.
